Chocolate Chip Scones

Hello Mad Bakers!

Woooow second post in two days, the blog is on fire! It’s clear that I’m taking advantage of this free time and we have not 40 degrees in Madrid yet . So I have time to work on the web, which I haven’t published for a long time and that CAN’T BE. 

In today’s recipe we have a sweet that in Spain we are not familiar with, but we are not going to stop doing it, are we?

I find it ideal for breakfast or afternoon snack, as well as crispy on the outside and half soft on the inside. I LOVE IT! I’ll say it’s the first time I made them and I dared to make them with chocolate, but after this first time, I’m sure I’ll keep making them with other flavors. 

We’re going ahead with the recipe and for that we’re going to need:

Chocolate Chips Scones

Delicious scones with chocolate chips that will be the delight of any breakfast or snack.

Their crunchy crust and soft interior will not last much longer than a couple of days at home.

Ingredients

  • 250 grams all-purpose flour
  • 2 + 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 115 grams butter very cold
  • 120 milliliters cream
  • 100 grams brown sugar
  • 1 egg
  • 1 + 1/2 teaspoon vanilla extract
  • 225 grams chocolate chips

Notes

Remember that by changing the number of servings, the amounts of the ingredients will automatically be changed. 

We start by stirring the flour with the baking powder and salt with a whisk.I recommend you to do it in a big bowl, because this way it will be easier for us to do the process that we have next. 

Now, taking advantage of the fact that we have a cold butter, we grate it very finely with the help of a grater, doing this will make more easy the task to incorporate it with the rest of the ingredients. 

And we pour it over the dry ingredients that we just stirred.

Using a pastry cutter or a fork, we “cut” the flour together with the butter until we get a crumbly dough. At this point, we take this mixture to the refrigerator, to keep it fresh.

Now we take the rest of the ingredients that we have left, except the chocolate that we will use at the end, and we mix them very well.

We rescue our buttery flour from the fridge, and pour this mixture of liquid ingredients over it. And we mix it very well with a rubber spatula.

This dough is really really sticky

Finally, we add the chocolate chips and mix them again so that they are well distributed throughout the dough.

If once you are cooking, you like to get your hands dirty, this is your recipe, and this is your moment. 

We are going to take a small bowl and put some flour in it, to keep it handy and help us to knead the dough.. 

We will sprinkle this flour lightly on a table and then add our dough, which we will give a rounded shape. If you see that your dough is very liquid, you can add a little more flour, if on the other hand, it is very dry, add a little cream to moisten it. 

You’ll see that I don’t have in here a picture of my “pizza” and it’s simply because I’ve realized that I’m so BAD at making a circular shape in a dough. If the same thing happens to you, please tell me because I want to believe that I am not the only one this happens to. 

When we have our circular shape (or almost, as in my case) we take it to a baking tray with baking paper.  

To form our scones, we are going to cut the dough with the help of a scraper into 8 pieces. On the same tray where we will later bake them.

 

To get a golden and somewhat crispy crust, we brush our scones with cream. And we take the tray to the refrigerator for about 20 minutes. This is when we start preheating the oven to 200 degrees.

After the cooling time, we take the tray and put it in the oven for about 22 – 25 minutes, until we see that the outside of our scones are browned. 

When we take the tray out of the oven, be careful because it burns a lot, let it cool down on a cooling rack and we can finally start eating our scones!
